Zucchini Slice

I have been making this recipe for years so have kind of just perfected it over time but it’s great for getting the kids to each veggies and I think it tastes even better the next day when the shredded ham has had time to soak the salty flavour through. You can add what you like – capsicum, peas, pepper etc but this is what works for my family. ☺️

INGREDIENTS:

▪️ 2 medium size zucchini’s

▪️ 1 medium carrot

▪️ Small can of corn kernels

▪️ 1/4 cup self raising flour

▪️ 4 eggs

▪️ 1/2 cup of grated cheese

▪️ 1 small to medium brown onion

▪️ 150-200grams shredded ham

METHOD:

1. Preheat oven to 180 degrees

2. Line baking tray with baking paper and set aside (I find this easiest as it doesn’t stick and less cleaning)

3. Chop onion and shredded ham finely

4. Cook in the pan until the onion has softened and ham is brown – set aside

5. Grate carrot and zucchini and place into a large bowl

6. Add self raising flour, cheese, corn, cooked onion and ham.

7. Whisk eggs with a fork and add to mixture

8. Stir to combine

9. Pour into baking tray

10. Bake for 40-45mins depending on oven
